When it’s hot, it’s nice to enjoy a delicious treat without the need to bake – which is why these indulgent but healthy no-bake cookie sandwiches are ideal for summer! Fuss-free and fun to make, these carob and orange treats are packed with goodness and are sure to go down a storm for children and adults – it’ll be a challenge to only eat one serving!

Makes: 6

Ingredients:
For the cookies –

  • 1 x 40g bar Supertreats Silky Carob Bar
  • 2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 2 tablespoons cashew or almond butter
  • Zest of 1 orange
  • 150g oat flour

For the filling –

  • 1 sweet potato, peeled, cooked and cooled
  • 2 x 40g Supertreats Cheery Chia Orange Bars
  • 1 teaspoon coconut
  • 3 tablespoons coconut cream
  • Zest and juice of 1 orange
  • Extra melted carob bar, to drizzle

Get making!

  1. First make the cookies: Gently melt the Silky bar with the coconut oil, maple syrup and cashew/almond butter then remove from the heat and stir in the orange zest and oat flour.
  2. The mixture should come together and form a dough (add more oat flour if too sticky). Divide into 6 balls and flatten with your hands, shaping into even-sized cookies. Place on tray lined with greaseproof paper and chill for at least 2 hours.
  3. Meanwhile make the filling: Gently melt the Cheery Chia bars with the coconut oil and allow to cool for 10 minutes.
  4. Add the sweet potato to a blender along with the melted carob mixture, coconut cream and orange juice and zest. Blend well until quite thick and smooth. Transfer to a bowl and chill in the fridge for at least 2 hours – it will set.
  5. When you’re ready to serve, spread a cookie with the filling and place another on top. Drizzle with a little extra melted carob bar if you wish – now enjoy!

Keep any remaining cookies and filling (separate) in the fridge for up to 1 week.
