We’re back again with another recipe featuring our friends at Minioti no added sugar ice cream. Similar to Supertreats, the brand formed as mums Anna and Natasha wanted to create a healthier treat for their little ones because couldn’t find any, so went out to create their own. We’re passionate about providing healthy treats for children (that adults can enjoy too!) so it’s great to collaborate with mumpreneurs who share the same ethos.

This time we’ve made some healthy ice cream bars with an oaty peanut butter base topped with the vanilla Minioti ice cream packed with chunks of our Silky Milky Supertreats carob bar – heavenly and so easy to make, definitely a winner!

Ingredients:
For the base -

  • 100g oat flour (just whizz up some rolled oats in a blender to form a flour)
  • 4 tablespoons coconut sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons peanut butter
  • 4 tablespoons milk

For the topping -

  • 1 x tub Minioti vanilla ice cream
  • 1 x Supertreats bar, cut into chunks (we used Silky Milky)

Get making!

  1. First make the base: Mix the flour, coconut sugar and cinnamon together in a bowl. Gently melt the peanut butter and milk then pour this in and mix well to combine.
  2. Press this into a small lined tub with your hands to cover the base in an even layer. Set aside.
  3. Remove the ice cream from the freezer about 20 minutes beforehand to allow to defrost and spoon into a bowl. Stir in the Supertreats chunks then spread over the base and smooth out evenly.
  4. Return to the freezer for at least 4 hours to set.
  5. When ready to serve, remove from the freezer 10 minutes prior, then lift out and place on a chopping board. Use a sharp knife to cut into bars – then eat straight away!
